Parmesan is a variant of vegetable casseroles, you can add the minced meat, ham or bacon. But we got Parmigiana with mushrooms! Many Italians prepare a “lazy” variant of casseroles: vegetables not fried, and put layers, lubricating oil.

  • Zucchini — 2 pieces
  • Parmesan — 100 grams
  • Tomatoes — 500 grams
  • Mushrooms — 500 grams
  • Mozzarella — 250 grams
  • Flour — 120 grams
  • Egg — 2 pieces
  • Oregano — to taste
  • Basil — to taste
  • Olive oil — to taste
  • Salt — to taste
  • Pepper — to taste

Method of preparation

  1. Mushrooms wash, dry on a paper towel, slice into halves. Zucchini and tomatoes cut into thin slices.

  2. Whisk whisk eggs with flour, pinch of oregano, salt, pepper and a tablespoon of cold water. Get the batter – the batter.

  3. In a frying pan with olive oil saute mushrooms and zucchini for 2-3 minutes, pre-dipped them in the batter. Fried foods will put on a paper towel to remove excess oil.

  4. Grease 4 single serve ramekins for baking. Put layers of tomatoes, zucchini, mushrooms, 2-3 leaves of Basil, mozzarella, diced or sliced, grated Grana cheese, then tomatoes,
    Grana cheese and add the butter.

  5. Bake at 180°C for 20 minutes. Allow to cool slightly and serve as warm appetizers.
